In an effort to further control my budget (moving and paying less rent helped a lot with this), I’ve resolved to cook more dinners that I can then bring to work the next day.
This Real Simple Take Back Dinnertime Challenge came up in my reader under Carrots n’ Cake, a blog I love to follow.
This has been a goal of mine for a while but it always seemed to fall by the wayside, but this is a perfect time to change my habits. New apartment, new kitchen, new challenges!
Last night, on my way home from a meeting, I stopped at my grocery store to pick up a few things for dinner. Picture my surprise when I happened across these lovelies.
I’ve been eating a lot more Turkish food lately, and I had just learned how to cook bulgur this past weekend.
Bulgur wheat is a whole-grain high in fiber and just general healthful goodness! Click here for a nutritional profile of this super grain.
Throw that in the cart (or rather pull shopping basket…).
The pictures I took of my sauteed chicken with bulgur in an eggplant and red pepper puree did not come out well. Bad lighting in the kitchen.
But believe me, it was delicious!
In other news my Persian rug finally made it to New York! Thanks to my brother for shipping it to me. I bargained for this when I was in Tehran in 2007.
Do you make a separate lunch for yourself every day or just take left-overs? Any tips for a soon-to-be regular lunch boxer?
